Professor Kevin Cashman, B.Sc., Ph.D, D.Sc., is the Endowed Chair of Food and Health at University College Cork (UCC), a joint position between the School of Food and Nutritional Sciences and the Department of Medicine at UCC. He is also a joint director of the Cork Centre for Vitamin D and Nutrition Research at UCC. Professor Cashman’s current research interests focus on a number of key public health areas in relation to vitamin D and vitamin K as well as micronutrient malnutrition. He has around 200 publications; he was awarded a DSc for published work in 2020. Professor Cashman currently chairs the Public Health Nutrition sub-committee of the Food Safety Authority of Ireland (FSAI) and is a member of the Scientific Committee of the FSAI. He has previously served as a member of expert committees and working groups, such as the FAO-WHO expert group on nutrient requirements for infants and young children aged 0-36 months, and the UK Scientific Advisory Committee on Nutrition working group on vitamin D.
